A smooth golden sweet potato and carrot soup with red lentils and coconut milk served with a slice of Barrons bread for dipping. The name says it all - this is a bright warming bowl that looks as good as it tastes. Sweet potato and carrot are two of the best natural sources of vitamin A you can put in front of a child supporting healthy eyesight and a strong immune system. The red lentils dissolve completely into the soup adding a subtle creaminess and a gentle protein boost that makes this far more sustaining than it looks. Coconut milk rounds the whole thing out - smooth slightly sweet and completely dairy free. Served with a slice of Barrons bread baked fresh in Waterford for the dipping that makes it a proper lunch.
